MEXICAN CAVIAR

Here's a great quick and easy appetizer, MEXICAN CAVIAR:

2 15 oz cans of black beans (rinsed and drained)
1 can of whole corn (drained)
1 bunch cilantro (chopped)
1 pint cherry tomatoes (chopped)
1 red onion (chopped)
2 avocados (chopped)
1 tablespoon olive oil
Juice of two limes

Gently mix all ingredients. Let stand in the refrigerator for at least four hours for best flavor. Makes a lot! Eat with tortilla chips.
